Butter cookies recipe.
For Madhu, who asked for this recipe.
Ingredients
- 2 cups of cake flour (320 g)
- 150 g of butter (3/4 of a standard 200 g block)
- 80 g of powdered sugar (4 heaped tablespoons)
- 1 medium egg
- up to 1/3 teaspoon of flavoring (e.g. vanilla) or 1 tbsp of vanilla sugar
Instructions
Place the flour and powdered sugar in a large bowl. Add the egg yolks and vanilla, then add the softened butter cut into small pieces.
Knead everything together until you get a smooth, uniform dough. You can do this by hand or using a mixer with a dough hook.
Form the dough into a ball, flatten it slightly, wrap it in plastic wrap, and place it in the refrigerator for about 30 minutes (can be skipped).
Preheat your oven to 180°C (top/bottom heat).
Remove the dough from the fridge and roll it out on a lightly floured surface to about 4–5 mm thickness.
Cut out cookies using your favorite shapes and place them on a baking tray lined with baking paper.
Bake for about 10–15 minutes, until the edges are lightly golden. Keep an eye on them - they should stay fairly pale.
Remove from the oven and let them cool on a rack. Once cooled, they will become crisp and delicate.
Optionally, dust with powdered sugar or decorate with icing or chocolate.
